Polyphenols in Cynara scolymus have been studied by scientists as an herbal treatment for diabetes mellitus. Ethanol extracts of Cynara scolymus can be used to fix liver, kidney, and pancreatic dysfunction associated with diabetes as often, all of these organs are involved in the disease. It inhibits alpha-amylase activity to reduce blood sugar levels by up to 42%. At the same time, this herb was able to lower total cholesterol levels by 18% and lower triglyceride levels by nearly 61%. LDL cholesterol levels went down by 38%. Tissue samples of the liver, kidneys, and pancreas demonstrate that Cynara scolymus is able to heal tissues in these organs.

Cynara scolymus increases both the number and the size of the bile ducts that secrete bile. This results in a significant increase in bile secretion in the duodenum. Placebo-controlled, double-blind scientific studies have shown that a single dose of Cynara scolymus extract at a dose of 1.92 grams (administered in six divided doses of 320 mg) per day was able to significantly increase the production of bile at 30 minutes and at 60 minutes after administration of this herb. The placebo group did not experience these health benefits. Participants experienced no side effects from Cynara scolymus
